    Curry Stew

    This fulfilling organic curry stew is wonderful in the colder months. It warms the kitchen and your soul with aromatic comfort!

    Ingredients:

    2 15 oz. cans organic chickpeas Several small red potatoes (equal ratio to chickpeas) ½ cup organic milk or rice milk 1 dry pint organic cherry tomatoes 1 organic red or green pepper (your choice) 2 tablespoons curry 1 tablespoon turmeric 2 tablespoons marsala 1 tablespoon cumin Salt to taste 1 teaspoon red pepper flakes, or more to taste

    Drain chickpeas and dump into large pot. Chop small red potatoes into eighths; add enough potatoes so that the ratio is about equal to the chickpeas. Add milk until tops of potatoes and chickpeas just peak out; use more or less milk as necessary.

    Turn heat onto medium high. Add curry, turmeric, marsala, cumin, salt and red pepper flakes. Cut cherry tomatoes in half, dice pepper, and add to the mixture. Cover with a lid until the concoction reaches boiling point, stirring occasionally. Meanwhile, read the mail, set the table, dance to your community radio station selection, etc.

    When it reaches boiling point, remove the lid and reduce heat to achieve a medium simmer. Grab a spoon and take the stew for a test drive. Adjust all spices to taste if necessary.

    If the liquid is achieving gravy-like status faster than the potatoes are softening, return the lid as necessary to cook potatoes faster and create more liquid. Remove the lid after potatoes begin to soften more.

    Continue this process of stirring occasionally, adding and removing the lid if necessary, taste testing, adjusting seasonings to your preference and enjoying music. The entire process takes about an hour, or an hour and 15 minutes. The stew is finished when the potatoes break apart as you insert a fork into them. The tomatoes will be completely boiled down; you may only see a rolled-up skin here and there.

    The main phytochemical compound in turmeric is curcumin. Curcumin is an anti-inflammatory and anti-carcinogenic. In other words, it’s really beneficial in reducing arthritis pain and preventing cancer. It even helps prevent memory loss, which is important for avoiding Alzheimer’s disease.

    Turmeric is also present in curry. Turmeric seems to be addictive–the more you eat, the better it tastes! But be careful–it stains stovetops, countertops and sinks easily, though temporarily. Don’t dump any down your shirt while you’re shoveling in the stew!

    This organic curry stew serves four. It’s wonderful served with room-temperature sourdough bread or warm pita bread dipped in organic sour cream or sour cream alternative.

    It’s also great served with a microbrew beer, which seems to intensify the effect of the spiciness. Have a handkerchief handy to wipe your nose or forehead.
