    When we do cooking we usually follow a recipe that we know is good and works. We follow it step by step to make sure that all the right ingredients are added. Sometime you have a secret ingredient that make your cake very special.

    If you bake chocolate cookies you would not suddenly through in garlic and tomato sauce as you know that it would completely destroy the cookie.

    Mental Cooking

    What about your mental cooking or your mental health? Are you following a recipe that 100% works or are you mixing lots of unwanted things into your mental world to make your life less than tasteful?

    Traditional aioli:

     

    Aioli is traditionally made by grinding garlic cloves in olive oil. It originally comes from Provence, France along the Mediterranean near Italy. There are many varieties that include mixing egg, lemon, and mustard in the aioli. In fact, the old fashion aioli recipes call for egg, olive oil, and garlic. If you have ever made mayonnaise, you see the similarity immediately. Mayonnaise is made primarily from mixing oil and eggs together. So my recipe takes a shortcut. It is difficult to get oil and egg to emulsify. Oil and egg are immiscible – they do not naturally mix. Consequently, you have to emulsify them by whisking both together so they will not separate. Mayonnaise has already been emulsified, and therefore my recipe saves you some time whisking. Try the basic recipe below and then add some other ingredients like basil, Dijon mustard, Italian parsley, chives, and even soy sauce. If you do decide to make the aioli from scratch, start with 1 cup extra virgin olive oil and one egg yolk along with the 1 tablespoon of lemon juice and 2 garlic cloves. Mix in a blender or small food processor until it emulsifies. Add the rest of the ingredients below (orange peel and salt and pepper) and you are ready to go.

     

    Ingredients (5 or 6 servings for fish, olives, etc.):

     

    ¾ cup – mayonnaise
    1 tablespoon – lemon juice
    2 cloves – garlic, minced
    1 teaspoon – orange peel
    Salt and pepper to taste

     

    Preparation:

     

    Mix all of the ingredients in a bowl and add salt and pepper to taste.

    It is best to refrigerate and “marinate” overnight to bring the flavors together. But the aioli can be made up to two hours prior to eating. If you do refrigerate overnight, make sure you serve it at room temperature the next day.

    Cooking for toddlers and growing children presents some unique challenges along the way.     Encourage your children to try new things rather than cooking the same few meals over and over again that you know they are likely to eat. This prevents two things from happening. First of all, it helps you not to get bored when cooking for your children. Second, it allows your children to try new flavors and textures and form opinions about them. By trying new things they will learn not only about the things they dislike but also the foods they really enjoy.

    You should also keep in mind that your children are people too when cooking for them. Just as you have foods you like and dislike they also will develop tastes over time. Those tastes may also change in time as well. It’s frustrating, I know, to spend time and money preparing a meal only to have your child push the plate away and refuse to even try the meal. For this, I recommend enlisting their help in the kitchen. Children are much more likely to eat the things they had a hand in preparing as a matter of accomplishment and pride. Its psychological warfare I know but all is fair in war and dinnertime.

    Perhaps the greatest gift you can give yourself (much greater than the help in the kitchen) by ‘forcing’ your little ones to help prepare dinner is that they will learn to better appreciate your culinary efforts and eat peacefully rather than sullenly. This tactic has met with great success in my household when cooking for little ones. I hope you will enjoy the same degree of success as well.

    When you are cooking a recipe for the first time it is always a wise thing to follow it to the letter so you are sure that the outcome is close to what the original chef intended it to be. But after cooking it a few times and when you are getting comfortable with it you can change a few things around if you feel like it. Don’t think that you are doing something wrong by not sticking to the recipe, there are always certain things in a recipe that is not exactly to you taste so your are allowed to change them a bit. Maybe a little less of this and a bit more of that, just so it is more up to your own taste.

    Being flexible is sometimes necessary

    It could also be that you just can not afford to get some of the ingredients because they are very expensive. Maybe the stores are closed and you forgot to get a certain part of the recipe. And while these things sometimes happen you start to improvise with the recipes you make and before you know it you are freewheeling it.

    There are a few things you should keep in mind when you change a recipe, only change ingredients that are not crucial to the dish. Those items you can leave out of your variation or you could put something else in it’s place you could even ad an ingredient in top of the others. The thing to remember is not to get rid of an important item, as an example, if you are making meatloaf you can not leave out the minced (or ground) meat can you? You can ad new spices to enrich the meatloaf recipe or make it more to your own taste.

    Talking of changing a recipe, I’m a vegetarian.

    Another good reason for changing a recipe if of course when your specific diet calls for it. Maybe you are, or someone who is coming to dinner is, a vegetarian then you could be thinking of starting to learn completely new recipes. You could also start with using the existing ones you know and substitute certain items with non animal ones.

    In recipes with sauces that are tomato based or things like stir-fries you could use tempeh or extra firm tofu. If the dinner is with people who are vegan then you could use some soft tofu when you need something to substitute cream cheeses. If the recipe calls for milk then there are soy milk or rice milk that you can use. And when you need to replace meat in chili or soup recipes you can use a wide variety of beans.

    So you see there are many reasons to divert from the original recipe, and you shouldn’t worry to much about it. Sometime you just need to go with what your instinct tells you to do. There is no cooking police that will throw you in jail when you give a meal some personal touch, the worst thing that can happen is that your family tells you to never do that again.
